Lettuce and squash are
the crops being grown here. The squash plants produce both the highly
desired “flor de calabaza” used to make delectable tacos,
as well as the vegetable itself. In the background plastic or cloth has
been spread over a just-planted crop to protect it from sunlight in the
day and the cold at night.
